These high quality filets are averaging 3-6# and come with the belly and fins trimmed off. We generally carry out of Canada whole Atlantic Salmon ranging in sizes from 8/10 up to 14/16 pound. We are expecting to have all sizes and availability this week but, the larger sizes are expected to be more limited. It would be best to call and check on current availability. Fresh “hand cut” Salmon portions are available upon request for banquets and large parties. “Sushi Quality” Scottish Atlantic Salmon will be available to start the week in fair supply. “Organically raised” Atlantic salmon will be available to begin the week. These fish are coming out of Ireland right now and are averaging 8-10 pounds each.
We do expect to have Loch Duart Salmon to start the week in limited supply. This small independent Scottish salmon farm winner of the “Taste of Britain” award produces one of the finest tasting and sustainable salmons any where in the world.

Pacific Halibut Season… We expect to see all sizes to begin the week (10/20, 20/40 and a few 40/60 pound fish). Pricing continues to be fairly reasonable despite landings being very sporadic. Call your sales person for the latest update on supplies. This year’s quota of just over 54 million pounds is a reduction of almost 10.5% compared to last years 60.4 million pounds caught. We do expect to have a fresh Halibut Cheeks to begin the week but, check with us for later in the week. It is best to preorder these in advance to make sure you will get them. We do expect to have a limited amount of “farm raised” Sable to begin the week. We do have refreshed sable on a regular basis which is very nice quality. “Fresh” Wild Sable is expected for the beginning of the week in limited quantities.
Wild Salmon… We do not expect to have Wild King Salmon..
