The oceans have provided a bountiful catch to start Restaurant Week.   Snappers on your list?  Pick from Genuine Florida Reds, B-Liners, Lanes, Yellow Tails and even Large Pink Pargo.  Pricing will surely not stay at these levels so do not wait for the end of the week.  Jumbo Sea Bass pricing is on the rise, but are available.  Wild Striped Bass is very tight.  Large Reds or Day Boat Cod Fish would be a great alternative.  East Coast Halibutis available from some of our best day boats, and pricing although a bit on the high side seems to have stabilized.   Looking for something a little different?  How about our Local Jumbo Porgy?  If you like Orata, you will love our Long Island PorgyBronzino prices have also eased creating a nice opportunity.  Local Tilefishhas opened again, and these gorgous creatures of the cold deep waters light up the stand with their yellow dots and luminescent eyes.   Sword prices have jumped due to tight supply, but Tuna prices remain affordable for the first part of the week.  Tunas are Domestic Yellow Fin and Big EyesCaught 150 miles due east of Cape Canaveral in an area known as…..”The Canaveral Straights.”   Call us with any questions or a price list.  718-620-8600

What an outstanding stand of goods“  exclaimed David Samuels as he stood back to admire the Blue Ribbon Stand this morning.  “Not sure what I want to take home for lunch”  The Snapper department boasted a variety of species representing both the Atlantic and Gulf Fisheries.  The Snappers were so vibrant and alive, it was almost necessary to wear sun glasses.  Blue Ribbon is the exclusive vendor in the market of Willams’ Snapper from Florida…Even the Jumbo Black Sea Bass was staring with envy at the Williams Red Snappers.  Both Snapper and Black Sea Bass are a Value.   The weather really cooperated this weekend yielding a great supply of local production. Fluke, Day Boat Cod, Monk Fish, Skate, Pollock, Squid, and even Black Fish (Tautog) are great opportunities to turn your kitchen into a fishing vessel that just packed out at the dock.  If you like Dorad, you will love our  Local Long Island Porgy.  A mild yet flavorful flaky white meat that will take well to any mediterranean preparation.  Sword Fish has tightened up, but Tuna has not been this reasonably priced for some time.  Call us for a price list, or if you have any questions.  718-620-8600.

Jumbo Black Bass Cheaper than Snappers

January 12, 2010 · Filed Under Market Report · Comment

Jumbo Black Bass is actually cheaper than Red Snapper, although we did receive a nice shot of 8+ Florida Red Snapper available at a value.  These Snappers are a great alternative to Wild Stripers which are starting to tighten.  Day Boat Cod Fish is by far the best value right now for white steak fish.  Pollock prices are starting to settle down as well.  East Coast Day Boat Halibut will be available tonight, but supply remains tight as well.  Long Island Sushi Grade Flukeis definitely the flat fish of choice as prices have created a terrific opportunities to work with this product.  Speaking of opportunities, were you not just wishing that Local Squidwould be in supply cheap enough to process and freeze for a later time, well guess what?  It is time.  Make the most of these market lulls and take a position of local dayboat loligo Squid.   Want something a little different?  Local Sea Trout.  2-4 pound fish with a mild flavor, tight flake, and a tight blood line.   Bronzinihave taken a nice price drop as well.  As far as pelagics…..Tunas are from Asia, both Yellow Fin and Big Eye.   Swords are fatty fish from Panama.  Both Sword and Tuna prices have eased.   We anticipate a good supply for the rest of the week.  Call us with any questions or to receive a daily price list.  718-620-8600

Our Stand Braggs the Best the Oceans have to Offer

January 6, 2010 · Filed Under Market Report · Comment

Our Fulton Market is bragging the best the oceans have to offer with the start of the new year.  Local production of the highest grade of  Dayboat Bled Sushi Fluke line the walk at Blue Ribbon Fish Company welcoming in the new year, and they are half the price they were last week.  You think our Orata from Greece is great, you should try our Local Jumbo Porgy.   As the volume of Porgies made them a market leader, both in quantity and value, their iridescent rigor stopped  buyers in their tracks, forcing them to take note of their beauty.    Speaking of beauty, Local Jumbo Black Sea Bass has finally hit the market in enough volume to make them affordable to the general market place.   Many top chefs will tell you, there is no fish better than the Jumbo Black Sea Bass !!! All of these fish are caught from our local boats.  Local Cod still remains the white fish of choice.  Halibut remains tight although  Farmed Halibut is  filling a void in the market.  Local Stripers are available, but will tighten as the week continues.  Tuna and Sword will also tighten as the week progresses.  Call us more information or a price list 718-620-8600
