Wild Striped Bass, Dayboat Cod, & Fluke take the lead
Wild Striped Bass, Chatham dayboat Cod, and Fluke will take the lead in the market to start this week. Wild Stipers open in Maryland today. The boats are out for only hours, and ship today. Tonight’s fish will be out of the water less than 12 hours. Snapper has gotten very scarce. Weather, holidays and management closures have resulted in high snapper prices. We are getting a few every day, but price will remain high. This holds true for Black Sea Bass as well. Our Halibut has been from the East Coast Dayboats and has been outstanding quality. Swordfish and Tuna have been in steady supply and moderately priced. 2+ Tuna loins are a value right now. We are still in the thick of the Mahi season. The Mahi are Ecuadorian dayboat fish. Greenish yellow blue fish with screaming blood lines that light up the table, would be a great alternative to the snapper market as well. Fluke season opens in Virginia and Carolina. Valentine’s Day
We will need to watch the weather and how it will affect supply. We are starting the week out with great pricing on Wild Stiped Bass and Day Boat Cod Fish. Flat fish like Local Fluke are still reasonable, and we received some great Tile Fish from Carolina. Tile Fish are a deep water fish with a white flake steaky consistency similar to Grouper. Snappers are a bit high, so the Tile might be a great alternative. Halibut remains tight, but we are receiving a few local fish every day. If you are looking for something Ruby Red for Valentines day…Our Domestic Big Eye Tuna is the way to go. The fish are caught in the Canaveral straights and shipped direct to us. Pricing on Tunahas stabilized, in fact the 2+ market is offering some great value this week. Sword has started to soften as a result of some trips packed in Hawaii, but we are featuring some Domestic tight red blood line fatty Sword fish also caught in the Canaveral straights.
